First week of January – Caldo gallego : a traditional Galician broth made with grelos (a traditional vegetable from Galicia normally used in January/March) eaten in the coldest of months of the year.
Second week of January – Pulpo a la gallega: Galician octopus (known as one of the best octopus of the worlds). Cooked and served in the most traditional Galician style; just boiled and served with potatoes, pimentón (Spanish paprika), extra virgin olive oil and sea salt.
Third week of January – Empanada gallega: a traditional Galician pie stuffed with meat.
